Glamour Magazine Chicken Recipe

I need a good recipe for chicken with a side dish to make!?
In making "Engagement Chicken" for my friend (see link for more Details http://www.glamour.com/magazine/2006/07/engagement-chicken) I need a tasty side dish to go with him, that is easy to make, but tastes well and is unique .. something he probably never before and that he believed the best cook in again and again he takes a bite .. But he is a picky eater .. hates fruit & Most vegetables .. also eats peppers or onions or any other type of cheese as white Americans .. also eats garlic or anything spicy. the only vegetables he like are potatoes, corn, peas … that's it .. but I hate peas so thats not a good idea .. in plodded on what to do here … I could really use some help!
pan-fried diced potatoes with sweet corn and a little salt and top with American cheese, no matter if its grated or sliced
